Let me christen the new thread, as it were.
For lunch today I had a sandwich of hot honey chicken with strong cheddar cheese on toasted oatnut bread accompanied by a large steaming mug of Colombian coffee. My wife has hinted that she would quite like omelettes for supper, suits me, it's one of the easiest meals to make.

Breakfast was two cherry muffins and a pear. (New fruit box includes several pears, and I like 'em best when they're still crisp.)
It's not dinnertime yet, but I'm ravenous. No idea what to eat. The freezer is full, but it's all ingredients.

Pasta and a sauce and grated cheese is quick. Scrambled eggs on toast (or beans on toast) is even quicker.

That pie looks scrumptious Efros. I have four ears of corn left by the outgoing tenant in our rental apartment, and I am going to make chicken and corn soup with them for dinner this evening. It's not really soup weather but they aren't quite good enough to eat fresh (and having been away all last week I don't have much left in the fridge so I need to use them up!)

The chicken and corn soup (also contained onions and potatoes) was edible, but that's about all I can say for it.

It's been catch-as-catch-can around here because work has been a swine. I'm also pretty much out of clean cups, bowls, and cutlery, so some of this stuff will have to be washed today.
Currently having Soreen for breakfast, and finishing off some grapes before they bite the dust.

Some post-dinner chocolate. Plain dark is the only kind I can have now so like the rest of my diet no variety, but hey, at least I can still have chocolate!

My Xmas Day evening meal was always a turkey and ham sandwich with stuffing and cranberry sauce.
I need to go and buy some turkey and ham. I've got some cranberry sauce in the fridge. Not sure if there's any sage & onion about the place but I'll certainly have a look.

Those post-Christmas sandwiches are one of the nicest bits of Christmas food in my opinion.
It's too hot to cook so we are going out to eat somewhere (almost anywhere) that has air conditioning.

I've been sitting here wondering why I'm so hungry, and the answer is that I hardly ate anything yesterday. Makes sense.
In a few minutes I shall go and have a salmon fillet and vegetable rice, because I still haven't done the washing up and my options are limited! The salmon is already cooked -- an "Uncle Sam" (hickory-smoked, bourbon and honey glaze) from the Pished Fish -- and the rice is an instant microwave packet, so I can just tip them both onto a plate and zap it.

Not so much that I forgot to eat as that I wasn't feeling all that well in the tummy. When it got to bedtime and I still hadn't eaten anything, I ended up just taking a bottle of Huel to bed. I'm quite... er, famine-resistant, so skipping the odd meal can only do me good. The problem is that if I don't eat, I don't remember to drink anything. Already trying to make up for about a week of dehydration (working too much to bother getting a drink), and I need to push myself to drink more. Not doing very well at it so far!
The salmon was delicious. That was the last of my Pished Fish order, so I'm a bit salmoned out at the moment, as much as I love it.
Have just been persuaded to order a "wonky bread" box. It's random baked goods that have been overproduced or undersold by the bakeries, so it'll be a surprise assortment. I've gone for the deluxe variety box, which is described as a mixture of flatbreads (e.g. naan, pitta, focaccia, tortilla wraps) and morning goods (e.g. crumpets, pancakes). They offer a subscription, but I don't think I can get through that much bread that fast, so I've just ordered a one-off box. Hope I can make enough room in the freezer to store it.

I created a sweet dip yesterday, as part of the range of snacks I laid on for my meeting (I had a tray of cut up fruit and felt it needed something to go with it). I had a small pot of cottage cheese with pineapple, and a strawberry yogurt of the sugar-free variety, so I whizzed them both together with a wand blender along with a couple of fresh strawberries until they were smooth and a fairly startling shade of pink. It was good, and Woodsman and I had the leftovers for dessert in the evening.

Made some chicken salad yesterday afternoon, it was our dinner last night and I'll be having some for lunch very shortly. Recipe from the old QI boards which has evolved somewhat.
My Chicken Salad
1 lb of diced rotisseried chicken breasts
1 medium diced onion
2 large cored, peeled and diced eating apples
2 oz chopped dried cherries
1 dozen black seedless grapes halved
handful of chopped honey roasted walnuts
enough mayonnaise for your liking
Salt and Pepper to taste.
Place all of the solid ingredients in a large bowl with a couple of dollops of mayo and fold until the mayo is evenly distributed, add more mayo and continue folding until you get the desired amount of mayo vs solid ingredients. Season to taste, stuff some pita pockets with it, wraps or toasted sandwiches. Transfer to a sealable plastic container and keep refrigerated.
gram quantities are a guideline and can be meddled with to fit your own preferences.

The "wonky bread" box arrived yesterday morning! The haul: 4 Greek-style flatbreads 4 panini 6 (?) high-protein tortilla wraps -- might be 6, might be 8, hard to count 6 pittas 6 sandwich thins 10 crumpets 8 Scotch pancakes Most of it went into the freezer. As much as I like bread, this is a lot to get through. It was crumpets for breakfast, of course, and I had soup for dinner with one of the flatbreads on the side. I've never had Greek flatbread before. From the appearance, I was expecting it to be similar to a naan, and it is, but only if the naan has had most of its flavour removed. Colin got me in the habit of lightly salting naan, but the Greek bread needed a LOT of salt! Extremely bland, but otherwise good. Since I kept the flatbreads out, I'm having more for breakfast this morning. Nice with butter -- and more salt. Frozen tortillas are a hassle, so those are being kept out of the freezer as well. I need to buy a load of ham and cheese, and plan on having lots of wraps over the next week.

I made my feta and chickpea bake for dinner last night, which we had with rice, and I had the leftovers for lunch today with a toasted English muffin. Very filling it was too, and very nice reheated.

The Pished Fish is near us. One of their vans was parked outside a local school a few months ago. I tried a few products, including what you have had. Nice stuff, but pricey for what you get

I just did my pre-bed blood test, and discovered that, despite feeling no particular ill effects, I was lower than I have ever measured before. That being the case, I grabbed some chocolates and took a long drink of natural apple juice.

I made a veggie hash the other day, which we ate with some baked haddock, and I had leftovers so I spread them in a baking dish and made four hollows in the mix and broke an egg into each, then cooked it for ten minutes or so at 425F and we ate it for lunch. When I make this with eggs from the start, I let the hash mix cook for half an hour before I put the eggs in, and then the eggs only take five minutes.
A friend on FB gave me the hash recipe and it's variable according to taste but we like it a lot. For the quantity I made the other day, which was 3-4 servings depending on appetite, I used two beets, one large apple, one red onion and one sweet potato. Peel the veg and cut all into small cubes - like about a centimeter or less - and spread them on a sheet pan that you've sprayed with oil. Season and drizzle or spray with oil and roast at 425F for 30-35 minutes. Good as a main dish with eggs broken into hollows in the mix for the last five minutes, or as a side dish with something else. Watch out for red wee for the next day or so.

Having been released from Covid prison in my bedroom on account of Woodsman having tested positive for Covid today and isolation therefore being pointless, I am looking forward to eating my own cooking again. Woodsman is a lovely man but a lousy cook.
